No-Bake Pumpkin Spice Tarts

Landrie and I made these pumpkin spice tarts over the weekend – easy and yummy! If you like pumpkin pie, you will love these.

A few suggestions when following the recipe: For a little more sweetness, we added 2 tbsp maple syrup to the filling in addition to the dates. Instead of making our own coconut whipped cream, we took the easy route and used dairy-free cocowhip original. If you don’t have collagen protein powder to add, no worries, just skip it.
