TigerNut Flour Banana-Blueberry Muffins

Healthy, kid approved, grain-free, sugar free banana-blueberry muffins.

Ingredients:

  • 4 eggs
  • 2 ripe bananas
  • 1/4 cup of avocado oil
  • 1/2 cup of tigernut flour
  • 1 tsp baking soda
  • 1/4 tsp sea salt
  • 1 tsp vanilla extract
  • 1 cup frozen organic blueberries
  • 2 scoops of collagen

Directions:

  • Preheat the oven to 350 F
  • Line muffin tin with parchment liners
  • Blend all wet ingredients together in a bowl
  • Add the dry ingredients — blend well
  • Add the frozen blueberries and stir
  • Spoon into individual muffin liners
  • Bake for 25 minutes
