Easy Chicken Soup

Brr– it’s in the 70’s in Austin, Texas — that means it’s time to dust off the crock-pot and make soup.

If you don’t own a crock-pot, I highly suggest you buy one today! It will make cooking, yummy meals so much easier.  Here’s a simple one that I like, under $25 bucks — click here*. 2-3 Organic, Free Range Chicken Breasts

1 x 32 ounce box of Chicken Bone Broth*

Fresh Vegetables of Your Choice — Carrots, Small New Potatoes, Brussel Sprouts, Celery and Fresh Spinach all work well.

Crushed Garlic*  1-2T

Thyme – Fresh or Dried* — if fresh, as much as you like — dried 1-2tsp

Himalayan Sea Salt*  – 1-2 tsp

Place chicken breasts in crock-pot*, then add as much or as little vegetables — chopped. If using fresh spinach, wait to add. Add garlic, thyme, oregano & salt. Add bone broth. Cook on low for 4-5 hours.  When your chicken is fully cooked, then add the spinach — I add about 2 cups. Let cook for another 15 minutes.  Once everything is cooked, just turn the crock pot off.  It will keep warm for sometime — if you’re concerned about having a hot meal, then feel free to use the warm setting instead.  AND that is it — super yummy!
